California BLT

From Suzanne Burch

  • 1 lb Bacon, cooked & crumbled

  • 12 Eggs, hard boiled

  • 1 Red Onion, sliced

  • 2 Tomatoes, wedged

  • 1 Head Lettuce

  • 1 Bunch Spinach

  • Layer lettuce first, then add spinach. Layer onion on top. Wedge tomatoes and place around dish. Cut eggs lengthwise and place around tomatoes. Sprinkle bacon in empty areas.
