Beef Chile - Huge pot, cook this up on a weekend and freeze the remainder for leftovers.

ingredients

  • 3-4 Lbs of low fat ground beef
  • 3 Green Peppers
  • 3 Onions
  • 3 Cans Tomato Soup
  • 3 Large Cans Diced Tomatos
  • 1-2 Large Can Tomato Sauce
  • Large Can Black Beans
  • 1-2 Large Can Dark Red Kidney Beans
  • Large Can Light Red Kidney Beans
  • Chili powder (I use a combination of grocery store chili powder and new Mexico red chili powder - it takes way more that you would think, but start slow and add it until you get it they way you like it. Maybe 2 T of each to start and go from there).

directions

In saute pan, brown ground beef, and drain fat. Move to large soup pan. Dice and saute vegetables in vegetable oil and when tender add to ground beef. Add tomato products and beans and spices. Turn on low heat and simmer several hours until flavors blend. Serve with tortilla chips and cheese.
