Cucumber Radish Slaw

  • 2 English cucumbers, halved lengthwise and thinly sliced
  • 4 – 6 radishes (1 cup)
  • 2 tablespoons minced red onion
  • 3 tablespoons cider vinegar
  • 2 tablespoons extra-virgin olive oil
  • 1 teaspoon sugar
  • salt and pepper

    Peel two cucumbers, halve lengthwise, and slice very thinly on the diagonal. Thinly slice radishes. In large colander, toss vegetables with 1/2 teaspoon coarse salt. Top mixture with a plate that fits inside colander; weight with a heavy object. Drain in sink 20 minutes; squeeze vegetables in paper towels to dry.

    Transfer to a bowl; toss with red onion, cider vinegar, olive oil, and sugar; season with more salt and ground pepper.
