Thai Lime Soda

Salty-sweet combinations in drinks are relished in Thailand, hence the optional inclusion of salt. To Westerners, this may be an acquired taste.

  • Sugar Syrup:

  • 1 cup granulated white sugar

  • 1 cup water

  • Drink:

  • 1/3 cup fresh lime juice

  • 1/4 cup sugar syrup, or to taste

  • pinch salt (optional)

  • ice

  • about 1/2 cup soda water

  • In a medium saucepan over low heat, combine sugar and water, stirring just until sugar dissolves. Once the sugar dissolves, stop stirring, increase heat, and bring the water to a boil. Continue boiling for 3 minutes without stirring. Do no let the syrup crystallize. Brush the pan side with a brush dipped in cold water. Remove from heat and let cool completely.

  • Pour into a jar, cover, and refrigerate indefinitely.

  • In a small jug, combine lime juice, sugar syrup to taste, and salt if using. Stir to blend. Pour into a glass packed with ice. Add soda water to top off, plus additional sugar syrup if you like.
