Balsamic Chicken

ingredients

  • 4 boneless skinless chicken breasts
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1 TBSP olive oil
  • 1/4 cup minced shallots
  • 1/2 cup chicken broth
  • 3 TBSP balsamic vinegar
  • 1 tsp brown sugar
  • 1 TBSP butter

directions

Place chicken between 2 sheets of wax paper. Pound 1/2 inch thick. Sprinkle chicken with salt and pepper. Heat oil in a large skillet over medium high heat. Cook 4 min per side or until cooked. Remove and keep warm. Add shallots and cook, stirring, 2 min. Add broth, vinegar, and sugar. Bring to a boil. Cook until reduced by 1/3 or about 4 minutes. Whisk butter into skillet until melted. Poor over chicken. Great served with garlic mashed potatoes, green veggie and a salad.
