Balsamic Chicken

  • Place chicken between 2 sheets of wax paper. Pound ½ inch thick. Sprinkle chicken with salt and pepper. Heat oil in a large skillet over medium high heat. Cook 4 min per side or until cooked. Remove and keep warm. Add shallots and cook, stirring, 2 min. Add broth, vinegar, and sugar. Bring to a boil. Cook until reduced by ⅓ or about 4 minutes. Whisk butter into skillet until melted. Poor over chicken. Great served with garlic mashed potatoes, green veggie and a salad.
