Chicken Tortellini Bake

This is a Laws family favorite.

ingredients

  • 2 Tbsp Margarine or Butter
  • 1/4 lb. Mushrooms, sliced
  • 1/2 c. Chopped Onion
  • 1 clove Garlic, minced
  • 1/4 c. Flour
  • 1/2 tsp Salt
  • 1/4 tsp Nutmeg
  • 1/4 tsp Ground Black Pepper
  • 2 1/4 c. Milk
  • 1 1/2 c. Shredded Mozzarella cheese
  • 1/4 c. Parmesan cheese
  • 1 lb. Chicken, cooked and cubed
  • 1 c. Peas, thawed
  • 1 lb. Fresh Tortellini
  • Silver Almonds or Durkee Onion rings
  • You can substitute broccoli for peas.
  • For the chicken breasts, you can put them in skillet, cover with water and simmer until they are cooked. I sometimes do this a few hours before I make the dish to cut back on the preparation time at dinner.

    Heat oven at 350 degrees.

    Melt margarine/butter in skillet.

  • 3

    Add mushrooms, onions, and garlic; sauté.

  • 4

    Stir in flour and seasonings.

  • 5

    Gradually add milk; stir constantly until boils and thickens.

  • 6

    Add cheeses; cook until melted.

  • 7

    Stir in chicken, tortellini and peas.

  • 8

    Pour into 9x13 in. baking dish. Sprinkle with almonds or onion rings. Cook for 30 minutes.
