Chicken Cutlets
My cousin Lorella made these in Italy almost like we make them in America except they used a huge kettle over a wood fire--Why use the oven!
ingredients
- Six Boneless chicken breast
- Italian Bread Crumbs like Progresso
- Two eggs
- Water
- Oil
- Mushrooms (I use a lot: 24 oz) Fresh Only!

Wash Chicken and Dry

Pound out until a little flattened
- 3
Beat eggs with a little water
- 4
Dip chicken in egg wash, then bread on both sides

Fry in oil on both sides, then move to a baking dish.

Saute Mushrooms until soft.

Pour mushrooms (don’t drain the oil)and pour over chicken and cover loosely.

Bake about 40 minutes
