Basic Muffin Recipe

Basic Ingredients
  • 2 cups all-purpose flour
  • 2/3 cup sugar
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 2/3 cup reduced fat milk
  • 1/4 cup butter or margarine, melted
  • 1/2 teaspoon vanilla extract
  • 1 large egg, lightly beaten
  • Cooking Spray
Mix-ins
  • 1 cup fresh cranberries, chopped
  • 1 teaspoon grated orange rind
  • OR
  • 1 cup blueberries
  • 1 teaspoon grated lemon rined
  • OR
  • 1 cup chopped apple
  • OR
  • 1 cup chopped pear
  • OR
  • 1 cup chopped pineapple
  • 1/2 teaspoon cinnamon
  • OR
  • 1 cup mashed bananas
  • 1/2 teaspoon allspice

    Preheat oven to 400 degrees. Combine flour, sugar, baking powder and salt in large bowl; stir well with whisk. Stir in fruit and make a well in the center of mixture. Combine milk, butter, rind/spices, vanilla and egg; add to flour mixture, stirring until just moist.

    Spoon batter into 12 greased muffin cups. Bake at 400 degrees for 18 minutes or until muffins spring back when touched. Remove immediately from pan and cool on wire rack.

These freeze well. Cool completely and store in freezer bags. To serve, thaw at room temperature and reheat in aluminum foil for 10-15 minutes at 300 degrees or until thoroughly heated.
