ingredients

  • 20 lemons, well-scrubbed
  • 2 (750 mL) bottles vodka (or everclear)
  • 5 1/3 cups sugar
  • 6 2/3 cups bottled water

    Wash lemons with a brush and hot water to remove wax and pesticides. Pat dry and zest so that there is no white pith on the peels (a vegetable peeler works well).

    In a 1 gallon glass jar, combine one bottle of alcohol and zest. Cover and let sit at room temperature for 10-40+ days in a cool dark place. The longer the better!

    After 40+ days are up, combine the sugar and water in a large saucepan. Cook until thickened, approximately 5-7 minutes. Let syrup cool completely and add to the zest/alcohol mixture with second bottle of alcohol.

    Allow to rest for another 40+ days.

    After the final rest period, strain and bottle, discarding lemon zest.
