Spanakorizo (Spinach and Rice Casserole)
This goes great with lamb or chicken. Can be served as a vegetarian entree as well.
ingredients
- 1/2 c. olive oil
- 6 green onions
- 3 lb. spinach, washed and chopped coarsely
- 1 1/2 c. rice
- 3 Tbsp. chopped dill
- 2 c. water
- salt and freshly ground pepper
- Lemon wedges

Heat oil in large pot and saute the chopped onions until golden, about 3 or 4 minutes. Stir in the spinach and saute until it is wilted, also about 3 minutes.

Add the rice, water, and dill and stir.

Cover and simmer over medium-low heat until the water is absorbed and the rice is cooked, about 15-20 minutes. Season with salt and pepper and serve with lemon wedges.
notes
The lemon gives the dish the added sparkle it needs. Make sure your dinner guests add a spritz to the rice and spinach for optimum flavor.
