Hartsville Vegetable Soup

ingredients

  • 3 to 4 pound beef bone
  • 2 quarts of cold water
  • 1 onion, quartered
  • 1 teaspoon salt
  • 2 cups fresh (or canned) tomatoes
  • 6 sprigs parley
  • 2 cups of chopped cabbage
  • 1/4 cup barley or rice
  • 5 or 6 carrots, sliced
  • 2 cups of cut green beans
  • 1 cup tiny whole skinned potatoes
  • 1/2 cup chopped celery

directions

  • 1

    Cut half the meat from the bone and brown in hot fat.

  • 2

    Add remaining meat and bone to cold water. Add browned meat, onion, and salt; cook slowly for 2 hours.

  • 3

    Add vegetables and continue cooking for 1 hour.
