Hartsville Vegetable Soup
Granny made it the best! Just plain good eating!
ingredients
- 3 to 4 pound beef bone
- 2 quarts of cold water
- 1 onion, quartered
- 1 teaspoon salt
- 2 cups fresh (or canned) tomatoes
- 6 sprigs parley
- 2 cups of chopped cabbage
- 1/4 cup barley or rice
- 5 or 6 carrots, sliced
- 2 cups of cut green beans
- 1 cup tiny whole skinned potatoes
- 1/2 cup chopped celery

Cut half the meat from the bone and brown in hot fat.

Add remaining meat and bone to cold water. Add browned meat, onion, and salt; cook slowly for 2 hours.

Add vegetables and continue cooking for 1 hour.
