Ratatouille
ingredients
- 2 Tbsp olive oil
- 1/2 medium onions - chopped
- 1 - 2 large cans chopped tomatoes
- 1 yellow pepper
- 1 green pepper
- 1 tsp or 2 cloves garlic - crushed
- Zucchini
- Squash
- Eggplant - optional
- Mushrooms
- Basil leaves
- Oregano leaves

Saute onions in olive oil. Chunk vegetables and saute in with onions and oil until tender crisp. Add tomatoes and seasonings and simmer until all cooked thru.

Serve with Parmesan cheese if desired.
