Crostini with Beef and Caper Mayonnaise
ingredients
- 24 slices baguettes - 1/4 - 1/2 thick
- 3 Tablespoons olive oil
- 1 cup mayonnaise
- 1/2 cup Parmesan cheese - grated
- 2 tablespoons chives - fresh, chopped
- 3 tablespoons capers - rinsed and coarsely chopped
- 3 cloves garlic
- 1 pound thinly sliced rare roast beef, cut into 24 pieces
- 3 plum tomatoes
- chives to garnish

Heat oven to 350, brush bread slices with olive oil and place on an ungreased cookie sheet. Bake for 8-10 minutes, or until crisp.

Combine mayo, Parmesan cheese, chives, capers and garlic powder; mix well.

Spread mayo mixture on slices of bread, top with tomato slice and roast beef slice. Garnish with chives.
