Crostini with Beef and Caper Mayonnaise

ingredients

  • 24 slices baguettes - 1/4 - 1/2 thick
  • 3 Tablespoons olive oil
  • 1 cup mayonnaise
  • 1/2 cup Parmesan cheese - grated
  • 2 tablespoons chives - fresh, chopped
  • 3 tablespoons capers - rinsed and coarsely chopped
  • 3 cloves garlic
  • 1 pound thinly sliced rare roast beef, cut into 24 pieces
  • 3 plum tomatoes
  • chives to garnish

directions

    Heat oven to 350, brush bread slices with olive oil and place on an ungreased cookie sheet. Bake for 8-10 minutes, or until crisp.

    Combine mayo, Parmesan cheese, chives, capers and garlic powder; mix well.

  • 3

    Spread mayo mixture on slices of bread, top with tomato slice and roast beef slice. Garnish with chives.

    This is great. I had it with a little horseradish in the Mayo mixture and although I don't care for horseradish I loved these!
