Banana Bread
This is everyone’s favorite- courtesy of James Beard.
ingredients
- 2 c. sifted flour
- 1 tsp. baking soda
- 1/2 tsp. salt
- 1/2 c, butter or margarine
- 1 c. sugar
- 2 eggs
- 1 c. mashed ripe bananas
- 1/3 c. milk
- 1 tsp. lemon juice or vinegar
- 1/2 c. chopped nuts (opt.)

Sift flour, soda and salt. Cream the butter and gradually add the sugar. Beat well. Add eggs, bananas and blend thoroughly.

Combine the milk and lemon juice. The milk will curdle.

Slowly and alternately fold in the flour and the sour milk, starting and ending with dry ingredients. Do not over-beat. Stir in nuts, if using, and pour into well-greased 9x5x3 pan and bake in a preheated 350° oven for 1 hour or until bread springs back when lightly touched in the center.

This seems to always be around since we have over-ripe bananas to use up. I usually double the recipe.
