Bush's Best Cajun Black Bean Soup
ingredients
- 1 can chicken broth
- 2 tbsp vegetable oil
- 1 onion, chopped
- 3 cloves garlic, chopped
- 1 tsp cumin
- 3 tsp chili powder
- 1/2 tsp oregano
- 3 cans (15 oz each) Bush’s Best Black Beans
- Black Pepper
- 1/2 cup chopped cilantro
- 1 jalapeno – boiled until soft
- 1/2 cup chopped ham
- Salsa
- Shredded Cheese

1. Heat oil in large pot over medium heat. Add onion and jalapeno, cook 5 minutes. Stir in garlic, cumin, chili powder, cilantro, and oregano. Add broth.

2. Puree 1 can black beans, add to pot. Add second can of beans (do not puree). Drain last can of beans and add to pot (also, do not puree)

3. Add chopped ham.

4. Reduce heat and simmer for 15 minutes, stirring often. Add black pepper, to taste. Top with salsa and shredded cheese.
