Zucchini Bread

  • Preheat oven to 325. Grease two 9x5 inch loaf pans. Beat eggs until light and foamy. Add oil, sugar, zucchini, and vanilla; mix well.

  • Sift together the flour, salt, baking powder, baking soda, and cinnamon. Add to zucchini mixture and mix well. Fold in nuts and coconut.

  • Pour batter into pans. Bake for 1 hour, or until a toothpick inserted in center comes out clean. Invert on wire rack to cool.
