Varenyky (Cottage Cheese Perogy)
ingredients
Perogy Dough- 1 1/2 cups water
- 3 tbsp cooking oil
- 1 egg
- 4 1/2 cups flour
- 1 tsp salt
- 1 500ml container dry cottage cheese
- 1 egg
- salt
- pepper
directions
Dough
Combine water, egg and oil and blend well in a mixer. Add water and flour (slowly, one cup at a time). Knead the dough and add the last cup of flour til the dough is smooth and soft. Put into a lightly oiled bowl and cover. Let stand for 20 minutes
Filling
Mix in a separate bowl the cottage cheese, egg and salt and pepper to taste.

Once the dough had set for 20 minutes, roll dough out into 1/4 inch thickness. Cut dough into 1 1/2 inch wide strips. Place a teaspoon of filling onto the end of the dough strip and fold over. Use a cup to cut dough into perogy shape and pinch perogy along the edges to hold in the filling. Place onto a well floured towel on a cookie sheet. Layer perogies on the cookie sheet with a towel between the layers.

The perogies can be placed in boiling water to cook, or frozen for another time.

Serve with sour cream gravy and farmer sausage.
