ingredients

  • 2 large eggs
  • 1 cup milk
  • 2 cups all purpose flour
  • 1 1/2 tsp. salt
  • 2 tsp. red ground pepper Divided)
  • 4 catfish fillets
  • 12 peeled fresh large shrimp
  • 1 Tbs. butter
  • 2 tsps. minced garlic
  • 1/4 cup of vermouth
  • 2 cups of whipping cream
  • 1/4 cup of chopped green onions (divided)
  • 2 tsps. lemon juice
  • 3 very thin ham slices, cut into strips
  • canola oil for frying
  • Garnish: lemon wedges

    Combine egs and milk, stirring until well blended

    Combine flour,1 tsp. salt, and 1/2 tsp. ground red pepper into a shallow dish. Dredge fillets in flour mixture; dip in egg minture, and dredge agin in flour mixture. In a dutch oven, pour in oil to a dept of 3 inches, heat to 360. Fry fillets for 6 minutes or until golden brown; drain on paper towels. Melt butter in a large skillet over medium heat, add shrimp and garlic, cook until shrimp turn pink. Remove shrimp,reseerve drippings in skillet. Stir vermouth into drippings and bring to a boil and cook 1 minute. Add whipping cream, lemon, green onions, and remaining salt and pepper; cook , stirring often , 12 to 15 minutes or until sauce is thinkened.

    Place catfish on a serving platter; drizzle with sauce. Top with shrimp and ham; sprinkle with remaing green onions for garnish.
