Chicken Marcella
Terrific for date night with a glass of wine and candlelight
ingredients
- 4 skinless, boneless chicken breasts, flattened to 1/4 inch
- 1/4 cup flour
- 1/2 tsp. salt
- 1/2 tsp. pepper
- 1/2 tsp. garlic powder
- 1/4 tsp, oregano
- dash of white sugar
- 3 TBL butter
- 4 TBL olive oil
- 1 cup sliced mushrooms
- 1/2 cup marsala wine
- 1/4 cup chicken broth

Prepare chicken breasts. Mix next 6 ingredients and put in large bowl or plastic bag for shaking. Dredge chicken pieces and brown chicken in butter and oil

Add sliced mushrooms, Marsala wine, and chicken broth. Reduce heat, cover and cook about 15 minutes, turning chicken once. Use pan scrapings for “gravy” and serve with angel hair pasta.

Add a tossed salad or French cut green beans and you have a meal.

Sprinkle your beans with bacon bits and sunflower seeds for a nice touch. Prepare cutlets early in day so prep time is easier at night. Get water boiling for noodles as you brown chicken.
