Beef Enchiladas
1 lb ground beef
1 cup cottage cheese
1 can Mexican rotel
1 can enchilada sauce
1 can green chilies
20 flour tortillas
4 cups cheese
Brown beef in skillet over high heat. Sprinkle with salt and pepper to taste. Stir in cottage cheese and set aside.
Mix rotel, enchilada sauce, and green chilies in bowl and set aside.
Spoon beef mixture and 1 tbsp sauce into tortilla and sprinkle with cheese.
Roll and place in 9x13 pan. Make 20. Pour remaining sauce and cover top with cheese.
Bake at 350 for 20 minutes or until bubbly.
