Breakfast Casserole
ingredients
- 1 lb bacon
- 1/3 cup chopped onion, green or white
- 3 cups shredded Cheddar cheese
- 8 eggs
- 2 cups milk
- 1 (16 oz) frozen hash brown potatoes, thawed
- salt and pepper to taste

1. Preheat oven to 350°. Lightly grease a 7x11 inch casserole dish.

2. Place bacon in large deep skillet. Cook over medium-high heat until evenly brown. Drain, crumble and set aside.

3. In a large bowl, beat together the eggs and milk. Mix in 2 cups cheese, bacon and onion. Stir in thawed hash browns. Pour mixture into prepared casserole dish.

4. Cover with aluminum foil and bake in preheated oven for 45 minutes. Uncover and bake another 15 minutes, until eggs have set. Remove from oven. Season with salt and pepper and top with Cheddar cheese; bake an additional 10 minutes.

5. Remove from oven and let sit 5 minutes before serving.
