Chicken with Sausage
Sausage adds a nice flavor to this chicken dish.
ingredients
- 3 1/2 lbs. chicken breasts or assorted pieces
- salt and pepper
- 1/2 lb. smoked sausage
- 1/2 cup flour
- 1/4 cup vegetable oil
- 2 tbsp. minced garlic
- 1/2 cup finely chopped scallions
- 1 1/2 cups green peppers cut into 1/2 inch pieces
- 1/2 tsp. thyme
- 1/2 cup chopped tomatoes
- 1/2 cup dry white wine
- 1/2 cup chicken broth
- 2 Tbsp. chopped parsley
directions
Sprinkle chicken pieces with salt and pepper and set aside. Slice sausages. Dredge chicken in flour and shake off excess. Heat oil in heavy skillet and add chicken. Cook, turning often until browned on all sides about 6 minutes. Add sausage and stir to blend. Continue cooking 4 minutes. Pour fat from skillet. Add garlic, scallions, peppers and thyme and stir. Continue cooking 2 m inutes and add tomatoes, wine, and broth. Cover and bring to a boil and let simmer 20 minutes. Uncover and let liquid cook down 5 minutes. Sprinkle with parsley and serve.
