Black Magic Cake
A delicious treat that can only be credited by “Black Magic”. Worth the extra effort!
ingredients
- 1 1/2 cups hot brewed coffee
- 3 cups sugar
- 2 1/2 cups all-purpose flour
- 1 1/2 cups unsweetened cocoa powder (sifted)
- 2 teaspoons baking soda
- 3/4 teaspoon baking powder
- 1 1/4 teaspoons salt
- 3 large eggs
- 3/4 cup vegetable oil
- 1 1/2 cups milk
- 3/4 teaspoon vanilla
directions
- 1
Mix together sifted flour, cocoa powder,
- 2
baking soda, baking powder, and salt, set aside.
- 3
In a separate bowl, combine brewed coffee,
- 4
sugar, oil, eggs and vanilla.
- 5
Alternate mixing together 1/3 of the dry ingredients,
- 6
1/3 of the wet ingredients and 1/3 of the milk,
- 7
repeat in thirds until all mixed, no need to over beat.
- 8
This batter is very runny so I line my pans
- 9
with buttered parchment paper,
- 10
using a larger piece than the pan
- 11
and clamp it in the excess paper sticking
- 12
out on the outside of the pan.
- 13
This helps hold the batter into the pans.
- 14
The first time I made this cake the batter leaked
- 15
out of the spring form pans and all over the bottom of the oven.
- 16
Pour into buttered and parchment paper lined 2 – 9” spring form pans
- 17
Bake 300° 45min. turn half way thru baking
- 18
Frosting
- 19
1 cup milk
- 20
2 1/2 Tbls Flour
- 21
Whisk in small pan over med. Heat till boiling, place pan in ice bath to cool.
- 22
Beat: 1/2 pound butter, 1 cup sugar, 1/2 cup cocoa till light in color (the longer the better)
- 23
Beat in flour mixture till it is the consistency of whipping cream. (don’t be in a hurry)
- 24
Layer together – Enjoy
