Helen's Black Magic Chocolate Cake
This is Helen’s favorite chocolate cake. She wanted to share this with the family.
1½ cups hot brewed coffee
3 cups sugar
2½ cups all-purpose flour
1½ cups unsweetened cocoa powder (sifted)
2 teaspoons baking soda
¾ teaspoon baking powder
1¼ teaspoons salt
3 large eggs
¾ cup vegetable oil
1½ cups milk
¾ teaspoon vanilla
Mix together sifted flour, cocoa powder,
baking soda, baking powder, and salt, set aside.
In a separate bowl, combine brewed coffee,
sugar, oil, eggs and vanilla.
Alternate mixing together ⅓ of the dry ingredients,
⅓ of the wet ingredients and ⅓ of the milk,
repeat in thirds until all mixed, no need to over beat.
This batter is very runny so I line my pans
with buttered parchment paper,
using a larger piece than the pan
and clamp it in the excess paper sticking
out on the outside of the pan.
This helps hold the batter into the pans.
The first time I made this cake the batter leaked
out of the spring form pans and all over the bottom of the oven.
Pour into buttered and parchment paper lined 2 – 9” spring form pans
Bake 300° 45min. turn half way thru baking
