California Beet Salad

ingredients

  • 1 head Romaine lettuce, washed and chopped
  • 1 can beets
  • 1 jar artichoke hears (pickled or raw)
  • 1 Avacado, chopped
  • 1 can large black olives
  • 1/4 red onion
  • alfalpha sprouts
Dressing
  • 1 Tbls Djion mustard
  • 3 Tbsp olive oil
  • 1 Tbsp white vinegar, to taste
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • dash of sugar

    Arrange alfalpha sprouts around the edge of a large plate. Put lettuce on the plate within the sprout border.

    In bowl, combine remaining vegetables. Toss with dressing. Top lettuce with vegetable/dressing mixture.
