Burrito Casserole

This is a favorite of the Tzucker kids and one that was sure to be polished off in no time.

  • This is kind of a “use what you have” recipe.

  • Brown the ground meat and prepare using the taco seasoning.

  • Grease a large oblong casserole.

  • Place a tortilla in front of you and add lettuce, beans, meat and cheese together. Roll up and place in the casserole. Continue this process til you have used it up and the pan is full.

  • Pour salsa on top of the rolled up burritos and then top with cheese.

  • Place in a preheated 350° oven and heat til the cheese is melted and the filling is bubbly.

  • Remove from oven, sprinkle with chopped green onions and serve sour cream on the side.

If you don't have beans, no worries; or if you don't want to use meat, this can easily become a vegetarian casserole.
