Split Pea and Ham Soup

ingredients
- 1 lb. 2 oz. bag of split green peas
- 1 Tbsp. olive oil
- 1 large onion, chopped
- 1 large carrot, chopped
- 1 stalk celery, chopped
- 4 c. chicken stock
- 4 c. water
- 8 oz. ham, diced
- 1/4 tsp. dried thyme
- 1/4 tsp. marjoram
- 1 bay leaf
- Salt and pepper to taste

Boil peas in water for 3 minutes. Skim off foam. Drain peas.

Cook onion until softened in oil for 3-4 minutes.

Add carrots and celery and cook another 2 minutes. Add peas and pour over the stock and water and combine.

Bring just to a boil and stir in ham. Add spices. Reduce heat and cover and cook gently for 1 to 1 1/2 hours or until ingredients are very soft.

Taste and adjust seasonings in necessary.
