Mom’s famous sweet potatoes
4-5 large sweet potatoes
4 Tbsp. butter
juice of one large orange
1 Tbsp. sherry wine
½ c. brown sugar
marshmallows
Bake and peel sweet potatoes.
Put everything into the mixer and blend. Put into a well-greased 2½ quart casserole and bake in a 350° oven for about 30 minutes. Add marshmallows on top and continue baking until they are brown and bubbly.

PREP TIME: 1 hr
TOTAL TIME: 1 hr and 45 minutes
You can fix the casserole ahead and bake it the next day. Allow extra time since the food will be cold.
