Sweet Potato Casserole

Mom’s famous sweet potatoes

  • 4-5 large sweet potatoes

  • 4 Tbsp. butter

  • juice of one large orange

  • 1 Tbsp. sherry wine

  • ½ c. brown sugar

  • marshmallows

  • Bake and peel sweet potatoes.

  • Put everything into the mixer and blend. Put into a well-greased 2½ quart casserole and bake in a 350° oven for about 30 minutes. Add marshmallows on top and continue baking until they are brown and bubbly.

You can fix the casserole ahead and bake it the next day. Allow extra time since the food will be cold.
