Carrot Pudding
A perfect accompaniment to a holiday roast or turkey
1½ c. grated carrots
1 scant c. shortening (e.g.Crisco)
½ c. brown sugar
2 eggs
1 tsp.baking powder
½ tsp. baking soda
juice of 1 large lemon
1¼ c. flour
Put ingredients in a bowl in the order given. (VERY IMPORTANT)
Blend and put into greased ring mold and bake one hour at 375°. Allow to cool for about 10 minutes before unmolding so it doesn’t fall apart.
