A perfect accompaniment to a holiday roast or turkey

ingredients

  • 1 1/2 c. grated carrots
  • 1 scant c. shortening (e.g.Crisco)
  • 1/2 c. brown sugar
  • 2 eggs
  • 1 tsp.baking powder
  • 1/2 tsp. baking soda
  • juice of 1 large lemon
  • 1 1/4 c. flour

    Put ingredients in a bowl in the order given. (VERY IMPORTANT)

    Blend and put into greased ring mold and bake one hour at 375°. Allow to cool for about 10 minutes before unmolding so it doesn’t fall apart.

This is my grandmother Jen's recipe. Serve with cooked peas in the center of the mold for a festive look.
