Cheesy Muffins
Enjoy these with a coffee, a glass of red wine and, most importantly, a good friend.
ingredients
- Preheat the oven to 200degreesC
- You will need
- 225g self-raising flour
- 50g rye flour/two crumbled up Weetabix
- 1 tsp baking powder
- 1/2 tsp bicarb of soda
- 1 tsp salt
- 1 tsp English mustard powder
- 125g strong cheddar grated
- 6 tblsp vegetable oil
- 150g Greek yogurt
- 125ml milk
- 1 egg
- 2 tblsp Worchestershire sauce
- For the topping
- 25-40g grated cheddar
- more Worchestershire sauce for sprinkling

1. Mix the wet ingredients in a jug

2. Mix all the dry ingredients together in a large bowl

3. Add the wet to the dry, mix quickly with a fork until just combined

4. Divide between 12 muffin cases and bake for 20 minutes

5. Take out of the oven and sprinkle over a little extra cheese and a sprinkle of Worchestershire sauce

6. Return to the oven and bake for 5 more minutes

Eat while they are warm, if you can wait that long
