Cheesy Muffins

Enjoy these with a coffee, a glass of red wine and, most importantly, a good friend.

ingredients

  • Preheat the oven to 200degreesC
  • You will need
  • 225g self-raising flour
  • 50g rye flour/two crumbled up Weetabix
  • 1 tsp baking powder
  • 1/2 tsp bicarb of soda
  • 1 tsp salt
  • 1 tsp English mustard powder
  • 125g strong cheddar grated
  • 6 tblsp vegetable oil
  • 150g Greek yogurt
  • 125ml milk
  • 1 egg
  • 2 tblsp Worchestershire sauce
  • For the topping
  • 25-40g grated cheddar
  • more Worchestershire sauce for sprinkling

    1. Mix the wet ingredients in a jug

    2. Mix all the dry ingredients together in a large bowl

  • 3

    3. Add the wet to the dry, mix quickly with a fork until just combined

  • 4

    4. Divide between 12 muffin cases and bake for 20 minutes

  • 5

    5. Take out of the oven and sprinkle over a little extra cheese and a sprinkle of Worchestershire sauce

  • 6

    6. Return to the oven and bake for 5 more minutes

  • 7

    Eat while they are warm, if you can wait that long
