Italian Style Stuffed Chicken
Savory chicken breasts stuffed with veggies and cheese.
ingredients
- 6 boneless, skinless chicken breasts
- 1 jar roasted red peppers in water, drained, patted dry and cut into strips
- 2 c. spinach
- 1 c. sliced red onion
- 1-1 1/2 c. mozzarella cheese
- salt and pepper
- garlic powder
- onion powder
- Italian seasoning

Preheat oven to 350 degrees. Spray 13x9" baking pan with non-stick cooking spray.

Poke holes in chicken breasts with a fork. Season chicken breasts with seasonings on both sides with desired amounts.

Lay chicken flat, then layer mozzarella cheese, red onion, roasted red peppers and finally spinach.

Roll up tightly then place in baking pan with ends placed down

Bake for 35-40 minutes or until chicken cooked through.
