Betty's One-Dish Chow Mein
Too much turkey after Thanksgiving, this recipe calls for two cups, you’ll wish you had more.
ingredients
- 3 small stalks celery, sliced (1/3 c.)
- 1 medium onion, chopped
- 1 T. vegetable oil
- 2 c. cooked chicken or turkey
- 1 c. boiling water
- 1/2 c. regular rice
- 1 can cream of chicken soup
- 1 can mushroom stems and pieces, drained
- 1 jar diced pimento, optional
- 2 T. soy sauce
- chow mein noodles
directions
Cook and stir celery and onion in oil in 3-quart saucepan over medium heat until onion is tender, about 5 minutes. Stir in remaining ingredients. Heat to boiling; reduce heat. Cover and simmer, stirring occasionally until rice is tender, about 30 minutes. Serve. Sprinkle with chow mein noodles if desired.
