Pollo Rellano
Pollo Rellano is translated from Mexican means “Pepper-Stuffed Chicken Boobies”!
4 Each Boneless Chicken Breasts
⅓ Cup Cornmeal
½ Pack Taco Seasoning
1 Each Egg
6 Sticks Monterey Jack Cheese
6 Each Anaheim Chili Peppers
¼ Tsp. Black and Red Pepper
2 Tblsp. Cilantro (Chopped)
Taco Sauce
Shredded Mexican Cheese
Salsa
1. Flatten chicken breasts between plastic wrap with meat mallet.
2. Combine cornmeal and taco seasoning. Crack egg into bowl. Insert cheese stick into pepper.
3. Place pepper onto chicken piece and sprinkle with cilantro, black and red pepper. Roll chicken breast into jelly roll and insert toothpicks to hold it together.
4. Dip chicken roll into egg and coat with cornmeal mixture.
5. Bake uncovered in 375° oven for 25-30 minutes.
6. Sprinkle with cheese and serve with salsa.
