Pollo Rellano

Pollo Rellano is translated from Mexican means “Pepper-Stuffed Chicken Boobies”!

  • 4 Each Boneless Chicken Breasts

  • ⅓ Cup Cornmeal

  • ½ Pack Taco Seasoning

  • 1 Each Egg

  • 6 Sticks Monterey Jack Cheese

  • 6 Each Anaheim Chili Peppers

  • ¼ Tsp. Black and Red Pepper

  • 2 Tblsp. Cilantro (Chopped)

  • Taco Sauce

  • Shredded Mexican Cheese

  • Salsa

  • 1. Flatten chicken breasts between plastic wrap with meat mallet.

  • 2. Combine cornmeal and taco seasoning. Crack egg into bowl. Insert cheese stick into pepper.

  • 3. Place pepper onto chicken piece and sprinkle with cilantro, black and red pepper. Roll chicken breast into jelly roll and insert toothpicks to hold it together.

  • 4. Dip chicken roll into egg and coat with cornmeal mixture.

  • 5. Bake uncovered in 375° oven for 25-30 minutes.

  • 6. Sprinkle with cheese and serve with salsa.
