Butter Cookies
ingredients
- 2 C. Flour
- 1/2 Tsp. Baking Powder
- !/4 Tsp. Salt
- 2 Sticks Butter or 8 Oz. Irish Butter
- 2/3 C. Sugar
- 2 Egg Yolks
- 1 Tsp. Vanilla
- 1 Egg White
- 1/3 C. Coarse Sugar

Sift together flour, baking powder and salt. Beat butter and sugar until light and fluffy (2 minutes). Add egg yolks and vanilla. Add flour mixture. Divide dough in plastic wrap(1 1/2 diameter and 7 1/2 inch long log). Chill for 1 hour or overnight.

Preheat oven to 325°. Beat egg white with a fork until foamy. Brush egg over log. Sprinkle with the coarse sugar over wax paper and press the sugar into the log. Cut the log into 1/4 inch slices. Place on cookie sheet 1 inch apart. Bake 18 minutes. Cool 5 minutes on cookie sheet. Transfer to wire rack to cool completely.
