Goats Cheese Stuffed Piquante Peppers with Mango & Spinach Croutes

ingredients
- 2 Slices Sourdough Bread
- 3 oz Mango Chutney
- 2 Handfuls Baby Spinach
- 6 Piquante Peppers Stuffed with Goats Cheese
directions

Place the stuffed piquantes into a pre heated oven @ 170 degrees til cheese softens to almost melting point.

Whilst waiting for the piquantes melt some butter and grill the bread on both sides til golden brown.

Plate the bread, saute the spinach for a few seconds in the same pan til wilted and set aside to drain of excess butter.

Paste the croutes with the chutney and add the spinach evenly.

Place the piquantes on to finish and serve with chilled Rose or Pink Champers.
