Pumpkin Spice Muffins
A healthy low-calorie twist on the breakfast muffin.
ingredients
- 1 1/2 c oatmeal
- 1/2 c oat bran
- 1 tsp baking powder
- 1 tsp baking soda
- 2 eggs, beaten
- 1 tsp cinnamon
- 1 tsp ginger
- 1 tsp nutmeg
- 1/4 c sugar
- 1/4 c plain yogurt
- 1 c canned pumpkin
- 1 c applesauce

In a large mixing bowl, beat sugar and eggs. Stir in applesauce, yogurt, and pumpkin.

Stir in dry ingredients (oatmeal, oat bran, baking powder, baking soda, cinnamon and nutmeg)

Fill muffin cups 2/3 of the way full.

Bake at 350 degrees F for 30-35 minutes or until muffins test done. Cool in pan 10 minutes before removing to a wire rack.
