chocolate covered cherries

MY favorite Christmas give away!

  • 2½ C. confectioners sugar

  • ¼C. butter; softened

  • 1T. milk

  • ½t vanilla or almond extract

  • (2) 8oz. jars maraschino cherries,long stemmed, well drained and dried off.

  • 2C. semi-sweet chocolate chips(12oz. bag)

  • 2T. shortening,like Crisco

  • In mixing bowl, combine sugar, butter, milk, and extract. mix well. Knead into large ball Roll into individual 1“ balls&flatten each ball into a 2” disc. Wrap around cherry and lightly roll in hands. Place stems up onto waxed paper lined baking sheet. Cover loosely and refrigerate 4-24 hours. Melt chips with shortening in double boiler or micro safe bowl. Holding stem, dip into chocolate; set on wax paper to harden. Store in covered container, refrigerated up to 2 weeks.
