White Fruit Cake
ingredients
- 1 lb. white raisins
- 1 lb. pineapple
- 1 lb. cherries
- 1 qt. nuts
- 3 cups plain flour
- 2 tsp. baking powder
- 1 cup butter
- 1 cup sugar
- 5 eggs
- 1/4 cup fruit juice
- 1 small glass jar apple jelly (about 1 cup)
- 1 1/2 Tbsp. vanilla
directions
Cream butter and sugar together, add eggs 1 at a time, beat well. Add jelly and vanilla. Add flour, alternately with fruit juice, using just 2 cups of flour. Mix 1 cup of flour with fruit and nuts. Mix all together and pour into a greased and floured tube pan. Bake at 275 degrees for approximately 3 hours.
