Red Potatoes with Fontina and Prosciutto
A good recipe for leftover potatoes. A really tasty breakfast dish.
ingredients
- 3 c. diced red potatoes
- 2 c. chicken stock
- 1 tbsp olive oil
- 4 slices prosciutto - chopped
- 2 leeks - 1/2inch slices
- 4 oz. Fontina cheese, diced
