Marcella's Chocolate Cake
Bill was our editor and without him this book would be impossible. He also LOVES chocolate.
ingredients
- 1 1/2 cups hot water
- 3/4 cup oil
- 3 squares unsweetened chocolate
- 3 cups cake flour
- 1 cup sour cream
- 1 tsp. salt
- 2 tsp. soda
- 3 large eggs
- 2 1/2 cups sugar
- 1 1/2 tsp. vanilla
- Frosting:
- 1 can sweetened Eagle Brand Milk
- 2 squares unsweetened chocolate
- 1/4 tsp. vanilla
- 1 tsp. hot water

Combine water, chocolate and oil in double boiler and heat until chocolate melts. Beat eggs and gradually mix in 1/3 flour mixture alternately with chocolate mixture using low speed on mixer and ending with flour mixture. Do NOT over beat. Mix only until flour is blended. Pour into greased, waxed, and paper-lined 9 x 13" pan. Bake 350 degrees for 40-45 minutes. Cool completely before frosting.

Combine milk and chocolate in double boiler stirring constantly for 10 minutes. Add vanilla and thin with water. Frost cake.
notes
This cake must weigh 10 pounds but it is oh, so good.
