Cold Sesame Noodles with Veggies

ingredients

  • 1 8.8 oz. package soba noodles, cooked and chilled
  • 2 cloves garlic, minced
  • 3 Tbsp. freshly grated gingerroot
  • 4 scallions, thinly sliced
  • 1/2 cup chunky peanut butter (natural is preferable)
  • 1/4 cup tahini
  • 2 tsp. Chinese chili paste
  • 1/4 cup soy sauce
  • 1 large seedless cucumber, cubed
  • 3/4 cup coarsely chopped cashews
  • 2 Tbsp. sesame oil
  • 2 Tbsp. rice wine vinegar
  • Freshly ground black pepper

    Combine garlic through soy sauce in a bowl with 1/2 cup hot water and stir to combine. Set aside.

    Mix cucumbers through pepper together in a separate bowl. Set aside.

    Toss prepared noodles with the peanut butter sauce, making sure that all the noodles are well coated. Noodles may be chilled again at this point, or served at once with cucumber salad on the side.
