Asian Chicken Lettuce Wraps
Easy, light and delicious.
ingredients
- 4 boneless, skinless chicken breasts sliced into small pieces
- 2 cups bean sprouts
- 1 cup fresh cilantro or mint
- 1/2 cup chopped peanuts
- 1 head of lettuce suitable for wrapping
- 1 cup sauce
- 1/3 cup each:
- soy sauce
- rice vinegar
- sweet thai chili sauce
- 1/4 cup dark sesame oil
- 1 T diced ginger
- 1 t diced garlic
- zest and juice of one orange

Whisk together all sauce ingredients. Pour half over the diced, raw chicken and reserve the other half.

Allow chicken to marinate for at least 20 minutes.

Saute chicken in sauce over high heat until the sauce turns dark brown and very sticky.

To serve, make wraps with the chicken, the fresh ingredients and a little of the sauce.
