Saag
ingredients
- 500g bag frozen leaf spinach (not defrosted)
- 4oz (110g) butter
- 1 large onion, peeled and finely chopped
- 3 cloves garlic, peeled and finely chopped
- 3oz (75g) piece fresh ginger, peeled and finely grated
- 1 heaped tsp coriander seeds, crushed
- 1 level tsp ground cumin
- 1/2 level tsp garam masala
- generous pinch sugar
- 2 hot green chillies, deseeded and finely chopped
- 1 heaped tbsp freshly chopped coriander seeds
- 1 level tbsp freshly chopped mint\
- salt and pepper

Preheat the oven to gas mark 1/2, 205F, 120C.

In a lidded cooking pot, melt the butter and gently fry the onion and garlic until pale golden. Add the ginger, ground coriander seeds, cumin, garam masala and half a teaspoon of freshly ground black pepper. Allow to fry gently stirring for about 3 mins. Now add 1 level tsp salt, sugar, 3tbsp water, the spinach and chillies. Slowly bring up to a simmering mass, cover with a lid and transfer to the oven for an hour.

Remove the pot from the oven and stir in the fresh coriander and mint. Check for seasoning, recover and allow the fresh herbs to infuse for 5 mins.
