Potata Frittata
An easy quick supper. It’s important to dry the potatoes well on a towel before attempting to sauté them. If you have one of those cool frittata pans, it’s even easier.
ingredients
- 1/2 lb potatoes, diced small
- 2 T diced onion
- 1 T diced rosemary
- 1 1/2 T olive oil
- 6 eggs
- salt and pepper
- 1 cup spinach
- 1/4 cup grated parmesan

Saute potatoes, onions, and rosemary in a heavy skillet, covered, for ten to twelve minutes. Beat eggs together with salt and pepper; then pour over potatoes. Stir spinach into eggs. Cover and cook until the top of the eggs are firm.

Turn on the broiler. Sprinkle with cheese Put the skillet under the broiler until the top of the eggs are done and the cheese is done.
