Salsa Mac and Cheese
A zesty version of the stovetop favorite.
ingredients
- 1 lb elbow macaroni (cooked and drained)
- 1/2 cup skim milk
- One cup shredded velveeta (yes velveeta) or other smooth melting cheese
- 1/2 cup salsa
- 1/2 cup canned black beans rinsed and drained
- 1 Tb onion powder
- 1 Tb garlic powder
- 1/2 tsp ceyenne pepper
directions
Once macaroni is cooked, return it to pot. Add milk and cheese and simmer on low heat until cheese is fully melted. Add other ingredients. Simmer 5-10 minutes.

Serve with fresh salad.
