Fried Chicken
I was raised on fried chicken and we had it several times a week when I was growing up. My mother taught me how to fry chicken when I was very young.
Sprinkle chicken pieces with salt and pepper. Heat cooking oil in skillet until hot. Dredge chicken pieces in flour. Carefully put chicken pieces into hot oil. When all pieces are in oil and frying, turn heat down to medium high and cover skillet. Fry for about 15 minutes, covered. Uncover, turn chicken pieces over and continue to fry, uncovered for 10 - 15 minutes or until golden brown.

A cast iron skillet is the best for frying chicken. For a little different taste, soak chicken pieces overnight in buttermilk and follow fried chicken recipe.
