Semi-Homemade Pad Thai
I love pad thai. But now that I can make it easily and quickly at home, I can impress my friends and enjoy one of my favorite dishes.
ingredients
- 1 box Thai Kitchen Pad Thai meal kit
- 1 tsp ground thai chili pepper (any spicy asian seasoning will do)
- 2 cloves garlic, minced
- 1 med onion, sliced
- 1 10 oz bag broccoli florets
- 1/2 lb extra firm tofu, diced or raw shrimp, peeled and deveined
- 1 TB sesame oil
- 1/4 cup chopped dry roasted peanuts (unsalted)
- 1 lime (1/2 juiced, 1/2 for garnish)
- 1/4 cup fresh chopped cilantro
directions
Prepare rice noodles according to package directions. In wok, heat sesame oil over high heat. Add onion tofu and garlic, saute 3-4 minutes until onions are translucent (if usuing shrimp, wait). Add spice and broccoli and saute until florets begin to turn bright green. Add shrimp now if using it. Cook until shrip are pink and solid. Add cooked rice noodles and sauce packet. Mix thoroughly. Add lime juice and cilantro. Toss quickly and pour into serving dish. Garnish with peanuts, lime wedges and a cilantro sprig.

Make sure you prepare all ingredients before you being stir frying.
