Chicken Piccante
ingredients
- 2 lbs chicken cutlets
- flour for dredging
- 1/2 cup butter
- 1/2 cup dry white wine
- 1/4 cup lemon juice
- chopped parsley
- 1 minced garlic clove
- salt/pepper to taste
- 1 lb sliced mushrooms
- 1 bunch thinly sliced green scallions
directions
Preheat oven to 350°. Dredge cutlets in flour and shake off excess. Melt butter in heavy 12 in. skillet over medium high heat till bubbling. Brown cutlets in 2 batches 2-3 minutes on each side. Return all meat to pan simmer 2-3 minutes with lemon and wine. Transfer to oven proof casserole dish, top with mushrooms and green onions and bake uncovered for 30 minutes. Sprinkle with parsley and serve.
