Baked Potato Casserole
This casserole is so rich and creamy. Not figure friendly....but so delicious.
ingredients
- 5 lbs. red potatoes, cooked and cubed
- 1 lb. sliced bacon, cooked and crumbled
- 2 c. cubed cheddar cheese
- 2 c. shredded cheddar cheese
- 1 large onion, finely chopped
- 1 c. mayo (must be regular)
- 1 8 oz. sour cream
- 1 T. minced chives
- 1 t. salt
- 1/2 t. pepper

Combine potatoes and bacon. In another bowl, combine the remaining ingredients. Add the potato mixture and toss gently to coat.

Transfer to greased 4 1/2 qt. baking dish. Bake, uncovered, at 325 degrees for 50-60 minutes or until bubbly and browned.
