Gram's Zucchini Bread
This bread is so rich and moist and I always get asked for the recipe. I’ve been told that it’s the best they’ve eaten.
ingredients
- 6 eggs
- 4 c. sugar
- 2 c. oil
- 6 t. vanilla
- 6 c. grated zucchini
- 6 c. flour
- 1/2 t. baking powder
- 2 t. salt
- 2 t. baking soda
- 4 t. cinnamon
- 2 c. nuts
- 1 box raisins

Beat together first four ingredients and fold in zucchini.

Mix together dry ingredients and mix slowly into wet ingredients. Mix by hand with wooden spoon. Add nuts and raisins.

Add mixture to greased and floured loaf pans.

Bake at 325 degrees for 1 hour.
notes
If zucchini yeilds more than 6 cups, you can add it all.
